Rudolph Pancakes

For the first of my Christmas themed blog posts, I am sharing a recipe for Rudolph the red-nosed reindeer pancakes.These are delicious, so cute and sure to put a smile on your face in the morning.

Ingredients

  • 1 cup (250ml) milk
  • 1 lightly beaten egg
  • 1cup (150g) self-raising flour
  • 2 tbsp butter
  • 4 rashers bacon
  • 4 white marshmallows
  • 8 dark chocolate chips
  • 4 strawberries

Method

  1. Whisk together the milk and egg in a large bowl. Sift over flour and whisk until it is smooth. This is a basic pancake batter.
  2. Melt two teaspoons of butter in a frying pan. Pour in the batter to form a large circle, a smaller circle and two triangles. and cook it for a couple of minutes until bubbles form, flip and cook it for another minute until it is done. Remove it and set it aside. Repeat this until all the batter is finished.
  3. Cut the bacon rashers in half and cook it until it is crip.
  4. Put Rudolph together by placing the large circle pancake on a plate and placing the smaller pancake on top for the head and face. Position the bacon rashers for the antlers an the triangle pancakes for the ears. Form the eyes by cutting a marshmallow a in half and putting a chocolate chip in the middle. Add a strawberry for the nose. 

There you have it, a festive breakfast to start your day! 

Note: To make the process faster, you can buy a pancake mix from the shop.

Light in the Darkness

Time To Break Away

In 2018, I introduced you all to an incredible singer from St Lucia, D.B.L, who I found while scrolling through Instagram.
