Candy Cane Cupcakes

Here is the recipe for delicious candy cane cupcakes. 

Ingredients: 

For the cupcakes

200g softened butter

220g caster sugar

3 eggs

150g self-raising flour 

50g cocoa powder

125ml milk 

For the peppermint chocolate buttercream

250g softened butter 

500g icing sugar

2 tbsp milk

200g melted and cooled white chocolate, 

1/2 tsp peppermint essence 

Red and green sprinkles to decorate 

Mini candy canes on top, optional 


Method: 

1. Put the butter and sugar in a bowl and beat it until it is pale and creamy.

2. Add the eggs one at a time, beating well after each addition. 

3. In alternating batches, add the flour, cocoa powder and milk and stir to combine. 

4. Line a 12 cup muffin tray with paper cases and divide the mixture evenly between the paper cases. 

5. Bake for 20 minutes or until a skewer inserted into the center comes out clean. Take the cupcakes out and set them aside to cool.

6. To make the peppermint buttercream icing, beat the butter until it is very pale and gradually add the icing sugar and milk and combine it well. 

7. Add the melted white chocolate and peppermint essence keep beating it until it is well combined. 

8. Spoon or pipe the buttercream icing onto each cupcake. 

9. Top them with red and/or green sprinkles and mini candy canes. 

10. Enjoy!

The Prove It Game

The public opinions on Meghan Markle, or Meghan, Duchess of Sussex, are divided. Some love her and most seem to hate her. I admire her in some ways.
